Im sitting in front of my mac thinking about what to post about on this beautiful sunday morning. And then it hits me, french toast of course. As soon as the thought entered my head I got this huge craving for this dish.

There is something so wonderful about white bread soaked in eggs, milk, sugar, cinnamon and my secret ingredient....apricot jam. The jam takes it to a new level.

Serves 4

20 slices of good quality white bread, day old
3 eggs
1 1/2 cup milk
2 tablespoon apricot jam
1/2 cup sugar
1/2 teaspoon cinnamon
1 tablespoon sugar

  1. Start by greasing a baking dish.
  2. Cut out stars in the bread using a cookie cutter.
  3. Place the stars in the pan.
  4. Beat eggs, milk, jam, sugar and cinnamon until you have a smooth batter.
  5. Pour evenly over the bread.
  6. Place in the fridge and let stand for at least 2 hours.
  7. This will make the mixture soak up into the bread.
  8. Bake at 375F until golden.
  9. Serve warm.
