A delightful tree made from Norwegian gingerbread!

My grandmother and I invented this tree together one Christmas in Norway.  I thought my grandmother was being so creative by hand-cutting the tree and leaves (the SNOW was my idea).  But in retrospect, I wonder if maybe she just couldn't locate the cookie cutters?  Regardless, it was a happy accident, because I think our tree is just FAB!

 

Makes about 3 large trees

You will need:

1 1/2 cups dark molasses

1 cup packed brown sugar

2/3 cup cold water

1/3 cup unsalted butter, melted

7 cups all-purpose flour

2 teaspoons baking soda

1 teaspoon salt

1 teaspoon ground allspice

2 teaspoons ground ginger

1 teaspoon ground cloves

1 teaspoon ground cinnamon

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease one cookie sheet.
  2. Mix together the molasses, brown sugar, water and melted butter.
  3. Sift together the flour, baking soda, salt, allspice, ginger, cloves and cinnamon.
  4. Add to sugar mixture and mix well.
  5. Cover and refrigerate for 2 hours.
  6. Roll dough 1/4 inch thick on floured board.
  7. Hand cut leafs and a tree trunk, its really easy just use a sharp small knife. Place about 2 inches apart on cookie sheet.
  8. Bake for 10-12 minutes. Cool on a wire rack.
  9. Assemble the trees on large trays.
  10. Dust with confectioners sugar... a.k.a. snow!

TIP:

This is my grandmother's basic gingerbread recipe, it's very versatile and holds shape well when using cutters. In this batch I left out the leavening (baking soda) because it makes the cookies more thin and CRISP, but it's really up to you!
