Day 23: 2014 Sweet Paul Holiday Countdown presented by Mrs. Meyer's Clean Day

Fattigman means "poor man" in Norwegian.  The dough is very similar to the dough used for Norwegian goro cookies.  Goro cookies are baked in an expensive and ornate cookie iron.  Perhaps these are called "poor man's cookies" because the dough is simply fried and doesn't require the expensive cooking equipment? 

Whatever the story, these cookies are DELISH! Like most Norwegian cookies, they are not too sweet.  My Mormor (grandmother) always made the cookies in this knot shape.  It's not the typical Norwegian way, but rather Mormor's personal spin on the cookie.  She had so much panache! I like to think that a little rubbed off on me.

A note on the lard:  Mormor ALWAYS fried these cookies in lard.  I know it's a cooking method that's not too common nowadays.  But I strongly urge you to try it.  These cookies are a once-a-year treat and in my opinion they are so much better when fried in lard.  You can substitute vegetable oil, but I would never do that myself.

You will need:

6 egg yolk1/3 cup sugar

1/2 teaspoon salt

1/3 cup heavy cream

1 tablespoon melted butter

2 1/4 cups all -purpose flour

1/2 teaspoon ground cardamom

lard or vegetable oil... but you should use lard!

powdered sugar

  1. Heat the egg yolks,salt and sugar light and creamy.
  2. Add cream, butter, flour and cardamom and beat until you have a thick dough.The finished result should be thick and sticky.
  3. Wrap in plastic and let it rest in the fridge overnight.
  4. Take it out and roll out thin in flour.
  5. Melt the lard on medium heat in a large pot until hot.
  6. Cut 3/4" strips of the dough and tie into a knot.
  7. Deep fry until golden, this takes less then a minute.
  8. Take them out and let them run off on paper towels.
  9. Dust with powdered sugar and serve.


You can store them up to 1 week in an airtight container, but they taste best when served immediately after cooking!
